Super simple and delicious breakfast/lunch – a spinach, tomato and mozzarella omelette with brown toast πŸ˜‹πŸ…πŸ₯š

I absolutely love making omelettes – they are rich in high-quality protein, healthy fats and many essential vitamins and minerals! I always have frozen spinach in my freezer, as it’s so easy to cook with only and saves you buying it all the time πŸ™ŒπŸΌπŸ‘πŸΌ

All you need to do is cook the frozen spinach first (as this takes slightly longer than the tomatoes) in a non stick pan with some butter until it has begun to wilt, then add the tomatoes and cook until softened. Then crack 2 eggs into a bowl (I add a splash of milk) and whisk. Pour over the tomatoes and spinach then add the cheese, wait until cooked then flip! πŸ˜‹πŸ˜‹
